Day 69 of 365 -- Healthier Hazelnut Treats (Recipe below) -- Cellphone Project 2018

I found this recipe on Pinterest while looking for Keto (low sugar/low carb recipes), and I’m so glad I tried it. It calls for either making your own version of "Nutella" or using a low or no sugar version. I opted for Justin’s brand, and it tastes better than the other anyway. It uses almonds in addition to hazelnuts, and it uses cane syrup instead of refined sugar. I also made these gluten-free by using coconut flour.

So, if you want to make your own, I used 3/4 cup coconut flour for one bottle (16 ounces) of Justin’s chocolate hazelnut butter. (My affiliate short link for that is amzn.to/2FrJGFL). I mixed in 1/2 cup syrup for moisture. I used a mix of Truvia nectar (Stevia and honey mix) and Agave maple-cinnamon syrup. It all mixed together better than I expected. I rolled chunks into balls and then rolled them around in a ground hazelnut and almond mix.

They were a big hit at my writer’s meeting, and I made a few more when I got home to keep in the freezer. I plan to try some with unsweetened coconut shreds and maybe coconut and almond since I like that combination. I may also try it with only the Justin’s and flour to see if it’s moist enough to cut out even more sweetness.
