Simple and so satisfying:

1. Cut up a pepper. These were some local grown ones but bell peppers would be just as fine.

2. Fill with cottage cheese. good_culture and cowgirlcreamery make my favorite ones. Cowgirl is INCREDIBLE.
.
3.Top with Trader Joe’s everything but the bagel seasoning.
.
4. Kick it up a notch with everything but elote seasoning on top or even chile lime seasoning. Both amazing.
.
Devour it up. The cottage cheese texture with the crunchiness of the pepper are exceptional. Plus it really does keep you full for hours.
